Curry Chicken Salad

1 pound cooked chicken, diced

1 medium bell pepper, chopped small

3 green onions, chopped (whites and greens)

2 celery stalks, chopped small

1 apple, chopped (Braeburn, Pink Lady, Fuji varieties work well)

½ cup dried cranberries or raisins

½ cup of Veganaise or mayonnaise

¼ cup of greek yogurt

1-2 tbsp curry powder

1 tbsp honey, agave syrup, or maple syrup

1 tsp salt

Toss chicken, vegetables, apple and cranberries together in a large bowl. In a small bowl, whisk together the veganaise, yogurt, curry, honey or other sweetener and salt. Pour mixture over chicken mixture and combine. Serve with salad greens, crackers, or warm pita. Also makes a great sandwich filling.

Mmmm. As the mother of a teenager who grazes on the fast food range, having healthy alternatives made ahead in the fridge seems like a hella good idea. Say you have two or three salad alternatives to say, cup of noodles and pototo chips, and probably the whole family will do better. Thanks!
